Chelsea's Garden Salad:
- About 2 cups of your choice of organic greens. I prefer the Power Greens mix of baby spinach, kale, and chard.
- 4 Organic strawberries, quartered.
- 1/2 Organic peach or apple, chopped. Whatever is in season.
- 5-6 slices of Organic cucumber, quartered.
- 1 Organic carrot, peeled and chopped.
- 1/2 or whole Organic avocado.
- Marcona Almonds (or nuts of choice), rough chopped.
- I use about 1-2 Tablespoons of Balsamic Reduction because ever since I had it in Italy I am obsessed, but regular Balsamic Vinegar is fine.
- 1-2 Tablespoons of Olive Oil
- Roughly 1/2 a teaspoon of Spicy, dijon, or whole grain mustard.
